What each ingredient does

Oysters
Main ingredient that provides the stew's briny flavour and tender texture when cooked until plump.
Butter
Adds richness and a silky mouthfeel to the broth.
Milk
Forms the creamy base of the stew and mellows the briny oyster liquor.

The step that matters

Cooking the oysters in the liquor. Oysters turn rubbery and shrink when overcooked. Cook only until they plump and their edges just begin to curl, since prolonged heat toughens the protein and squeezes out moisture.
