Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and dry the oysters, then remove half the shell, leaving the oyster in the other half.

  2. Sprinkle the oysters with white pepper and coarse sea salt.

Bake and serve

  1. Arrange the oysters on a sheet-iron pan and bake in a hot oven at 400°F (200°C).

  2. Serve immediately in the shell.

Make the dressing

  1. For the dressing, chop the parsley finely and mix with melted butter and a squeeze of lemon juice if desired.

What each ingredient does

Shell oysters
The main ingredient; baking gently cooks the oyster in its own shell.
Melted butter
Adds richness and fat that carries flavour in the dressing.
Lemon juice
Adds acidity that brightens the rich butter and oyster flavour.

The step that matters

Baking the oysters. Oysters are done as soon as they firm and the edges begin to curl; overbaking toughens the protein and makes them rubbery and dry.
