Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 400°F (200°C).
Cut the fat pork into pieces the size of the oysters.
Lay the pork pieces in a sheet-iron dripping pan.
Place a drained oyster on each piece of pork.
Dust with white pepper and cover with another piece of pork.
Bake until the pork is crisp and light brown.
Serve immediately on a hot dish with sliced lemons.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
