Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg binds the rolled crackers to the cutlet as a coating.
Rolled crackers
Forms a crisp, browned crust around the cutlet.
Butter
Adds fat and rich flavor for browning the cutlet and finishing the dish.
Lard
Adds fat that browns the coating and tolerates the heat of the skillet.
Flour
Thickens the pan juices into a gravy.
Sweet milk
Liquid that turns the flour and pan drippings into a creamy gravy.

The step that matters

Cook the cutlet slowly until browned on both sides. Slow cooking in fat lets the crumb coating brown evenly and the meat cook through without scorching the outside. Higher heat can burn the crackers before the center is done.

Swap the white pepper

How well each one fits the dish's main ingredients (egg, butter, flour, milk):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Capersfits better
  4. White pepperthe original

Fit is the average pairing score against egg, butter, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
