Why it works: Turkey and cranberry work together. They rank in the top 9% of all ingredient pairs, and cooks put them together in 97 recipes. Both carry trans-2-decenal, which smells waxy, orange. The science ↓
Roast Turkey
Ingredients
Directions
The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.
Prepare the turkey
Prepare the turkey by picking, singeing, drawing, washing, wiping, and trussing it. Season the inside with salt and pepper.
Stuff the turkey with your preferred dressing. Sew up the opening with strong thread.
Place the turkey in a baking pan with butter.
Roast
Roast the turkey in a hot oven (400°F / 200°C) for about five hours, basting frequently.
Make the gravy
Boil the giblets and neck in 1 pint of water until tender.
Mash the liver. Chop the gizzard finely.
Add the mashed liver and chopped gizzard to the gravy.
Pour off the drippings from the baking pan. Rub the glaze from the pan.
Add the giblet cooking water.
Let the gravy boil. Add the prepared giblets to the gravy.
Thicken the gravy with browned flour.
Season the gravy with salt and pepper.
Serve
Serve the gravy in a tureen with the turkey and your choice of sauce.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Turkey
- Forms the main roasted centrepiece, with its meat cooking through slowly in the oven.
- Butter
- Adds fat to the pan that helps the turkey brown and stay moist.
- Browned flour
- Thickens the gravy so it coats the turkey and dressing.
- Giblets and neck
- Simmered to make stock and chopped into the gravy for savoury depth.
The step that matters
Basting the turkey during roasting. Regular basting moistens the surface and helps it brown evenly over a long roast, so the skin does not dry out before the inside is cooked.
Swap the cranberry
How well each one fits the dish's main ingredients (turkey, pepper, butter, flour):
- Cranberrythe original
- Lemonfits about as well
- Figfits less well
- Plumfits less well
Fit is the average pairing score against turkey, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
