Brandy Jelly

Ingredients

Directions

Prepare the jelly base

  1. Combine cold water, sugar, and gelatin in a saucepan. Grate in the lemon rind and squeeze in the juice. Mix thoroughly and let stand for 10 minutes.

  2. Place the saucepan on a hot stove. Beat the egg whites in a bowl, then add them to the mixture along with a little grated nutmeg, cloves, and bay leaf.

Clarify and set

  1. Mix well for 1 minute. Stir the mixture. When it boils, move it to a cooler part of the stove and stir for 6 minutes.

  2. Strain through a clean, scalded cloth until clear. Add the brandy.

  3. Pour into a mold. Pack in ice until set.

  4. Turn out, wipe, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Egg whites
Collect impurities as they cook, so the strained jelly comes out clear.
Sugar
Sweetens the jelly and balances the lemon and brandy.
Lemon
Adds acidity and aroma from its rind and juice.
Brandy
Adds its own flavour and aroma to the finished jelly.

The step that matters

Stirring while the mixture clarifies. Once the egg whites are in and the mixture boils, it must be moved off the heat and stirred gently. Egg whites trap cloudy particles as they coagulate; vigorous boiling breaks up that raft, leaving the jelly cloudy instead of clear.
