Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the butter and sugar.

  3. Add the beaten egg yolks and mix for 10 minutes.

  4. Stir in the flour until the mixture is stiff and smooth.

  5. Add the brandy and the beaten egg whites, mixing until smooth.

  6. Beat the mixture for at least 30 minutes to ensure lightness.

Bake and serve

  1. Pour the batter into a round baking tin with a tube in the center.

  2. Bake for 1 hour, starting with moderate heat for the first 15 minutes.

  3. Increase the heat for the remaining 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air, giving the cake a tender, rich crumb.
Sugar
Sweetens the cake and helps hold air when creamed with butter.
Flour
Provides the structure that sets the batter into a firm cake.
Eggs
Add structure and richness, and the whites help lift the batter as it bakes.
Brandy
Adds aroma and flavour to the cake.

The step that matters

Beating the batter for at least 30 minutes. Long beating builds and keeps air bubbles in the batter, which expand in the oven and give lightness. Under-beating leaves a dense cake, and once the flour is in, over-mixing can toughen the crumb through gluten development.
