Why it works: Butter and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Hard-boiled egg yolks
- Form the bulk of the balls and give them a rich, crumbly paste texture.
- Raw egg yolk or white
- Binds the paste so it holds its shape when rolled.
- Melted butter
- Adds moisture and richness to the paste and aids browning in the pan.
- Flour
- Forms a dry coating that helps the outside brown and crisp when fried.
The step that matters
Frying in butter until golden brown. Butter browns quickly because its milk solids darken at moderate heat, so the heat must be controlled to avoid scorching before the coating is evenly golden.
