Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the tomato liquid into a firm jelly that holds its shape when turned out.
Tomatoes
Provide the main body, acidity and flavour of the jelly.
Soup stock
Adds savoury depth so the tomato base tastes less flat.

The step that matters

Dissolving the gelatine fully. Softened gelatine must be stirred into the warm tomato mixture until no granules remain. Undissolved gelatine leaves grainy patches and weak spots, so the jelly may not set evenly.

Flavor stand-ins for the clove

How well each one fits the dish's main ingredients (sugar, tomato, onion, garlic):

  1. Cuminbetter flavor fit
  2. Oreganobetter flavor fit
  3. Corianderbetter flavor fit
  4. Clovethe original

Fit is the average pairing score against sugar, tomato, onion, garlic. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
