The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Forms the gel network that makes the jelly set firm yet tender.
Sugar
Adds sweetness and helps balance the sharp citrus flavour.
Grapefruit juice
Provides the main citrus flavour and some acidity.
Lemon juice
Adds extra acidity that sharpens the flavour.

The step that matters

Add the gelatin off the heat. Gelatin loses gelling strength when it is boiled or kept at high heat for long. Removing the syrup from the heat before adding the soaked gelatin protects its setting power and gives a firm, clear jelly.

Swap the grapefruit

How well each one fits the dish's main ingredients (sugar, gelatin, lemon):

  1. Orangefits better
  2. Vanillafits better
  3. Limefits about as well
  4. Grapefruitthe original

Fit is the average pairing score against sugar, gelatin, lemon. Candidates are from the same food group and used in at least 100 recipes.
