  3. Add the apple pulp, sherry wine, and softened gelatin dissolved in hot water.

  4. Set the mixture in a pan of ice or snow, stirring until it begins to thicken.

Assemble and serve

  1. Fold in the whipped heavy cream mixed with powdered sugar.

  2. Fill a mold decorated with lady fingers or macaroons.

  3. Garnish with whipped cream and cherries when unmolded.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooking apples
Provide the main fruit flavour and the pulp that gives the charlotte its body.
Egg white
Whipped with the hot syrup, it builds a light, airy foam that lightens the texture.
Gelatin
Sets the mixture so it holds its shape when unmolded.
Heavy cream
Folded in whipped, it adds richness and a soft, creamy texture.
Sugar
Sweetens the dish and, cooked to thread stage, helps form the light foam.

The step that matters

Pouring the hot syrup onto the egg white. Pour the syrup slowly while beating constantly. Pouring too fast or without beating can cook the egg white unevenly or deflate the foam, so the mixture loses its lightness.

Swap the lemon

How well each one fits the dish's main ingredients (apple, cinnamon, sugar, egg, sherry, wine, gelatin):

  1. Vanillafits better

  3. Figfits better
