What each ingredient does

Egg white
Whipped into the cooling coffee, it adds foam and a light, airy texture.
Sugar
Dissolves into the coffee to add sweetness that balances its bitterness.

The step that matters

Adding the egg white before the mixture is completely frozen. Egg white foams best when it is beaten into a liquid that is still cold but not solid. If the coffee is fully frozen, the white cannot be whipped into it evenly, so the frothy texture will not form.
