What each ingredient does

Pistachio ice cream
Forms the frozen outer layers that hold the roll together when sliced.
Whipped cream
Adds a light, airy texture to the filling of the frozen roll.
Sultana raisins
Add chewy texture and concentrated sweetness to the dessert.
Brandy
Soaks into the raisins, adding a warm aroma and boozy flavor.
Sugar
Sweetens the sauce and, boiled with water, thickens into a syrup.
Claret
Gives the sauce its wine flavor and a touch of acidity.

The step that matters

Packing the tin in ice and salt. Salt lowers the temperature at which ice melts, so the ice and salt mixture gets colder than ice alone and firms the roll. Without enough salt, the dessert may stay too soft.
