What each ingredient does

Pickles
Form the main body of the jar and provide the crisp, sour bite of the finished pickles.
Powdered alum
Helps the pickle slices stay firm and crisp during soaking.
Coarse sea salt
Draws water out of the pickles and onions and seasons the contents.
Sharp vinegar
Adds acidity that gives the pickles their tangy flavour and helps preserve them.
Sliced onions
Add sharp, savoury flavour and aroma to the pickle mixture.
