What each ingredient does

Cucumbers
Main vegetable that is cured and pickled, becoming firm and crisp through brining.
Coarse salt
Draws water out of the cucumbers and seasons them during the long brine soak.
Vinegar
Provides the acidity that preserves the pickles and gives them their sharp flavor.
Mixed spices
Infuse the vinegar with aroma, adding warm and savory flavor to the pickles.

The step that matters

Return the vinegar to the pickles after reheating. The vinegar must be hot and fully covering the cucumbers so the acid and spice flavors penetrate evenly and the pickles stay submerged and preserved.
