Boiled Cauliflower

Ingredients

Directions

Prepare

  1. Remove the outer leaves and cut the stem close to the flowerets.

  2. Wash the cauliflower well in cold water.

  3. Soak in clear, cold water for 1 hour.

  4. Tie the cauliflower in a piece of cheesecloth to prevent breaking.

Boil and serve

  1. Place it in a kettle of boiling water with the stem down.

  2. Add 1 teaspoon of salt and boil for 30 minutes, or until soft and tender, keeping the kettle covered.

  3. Carefully lift the cauliflower from the kettle, remove the cloth, and place it in a shallow dish stem downward.

  4. Pour cream sauce over the cauliflower and serve.

What each ingredient does

Cauliflower
Forms the main body of the dish, becoming tender as it cooks through boiling.
Cream sauce
Adds richness and moisture to the mild, boiled cauliflower.

The step that matters

Boiling until soft and tender. Cauliflower must cook long enough for the dense stem to soften fully. Keeping the kettle covered helps the water return to a boil and holds steady heat, so the head cooks evenly.

Swap the cauliflower

How well each one fits the dish's main ingredients (cream, sauce):
