Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Wash and dry the potatoes thoroughly.

  2. Place them in a 350°F (175°C) oven for one hour.

  3. Remove from the oven, cut in half, and scoop out the insides into a dish.

Fill and brown

  1. Mash the potato insides and mix in the butter, sweet cream, salt, and pepper until light.

  2. Refill the potato halves with the mixture.

  3. Place the filled halves on a warm platter and return to the oven to brown.

Serve

  1. Serve immediately, adding parsley or onion if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy bulk that becomes light and fluffy when mashed and baked.
Butter
Adds fat and richness, helping the mashed potato taste smooth and creamy.
Sweet cream
Adds moisture and richness, keeping the mashed filling soft and light.

The step that matters

Mashing the potato insides until light. Overworking or using too little liquid can make mashed potato gluey or dense, while enough fat and cream keeps the filling smooth and airy.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (potato, egg, butter, cream, pepper):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Tarragonfits less well
  4. Dillfits less well

Fit is the average pairing score against potato, egg, butter, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
