What each ingredient does

Potatoes
Form the bulk of the salad and hold the dressing in their cut blocks.
Eggs
Add richness and body, and the cooked yolk thickens the dressing.
Vinegar
Provides the sharp acidity that balances the sugar and fat.
Butter
Adds fat and smoothness to the cooked dressing.
Cream
Adds moisture and a smooth, creamy texture to the dressing.
Sugar
Balances the acidity of the vinegar with sweetness.

The step that matters

Pouring the boiling vinegar over the beaten egg. If the hot liquid is added too quickly or without constant stirring, the egg can scramble into lumps instead of blending smoothly. Pouring slowly while stirring gently warms the egg so it thickens the dressing evenly.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (potato, egg, celery, vinegar, butter, pepper, sugar):

  1. Capsicumfits better
  2. Mustardfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against potato, egg, celery, vinegar, butter, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
