Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the ice and lowers its freezing point so it stays soft and scoopable.
Sour cherries
Provide the main flavour, colour and fruit pulp in the ice.
Egg whites
Beaten in at the end to add lightness and a fluffier, airier texture.
Lemon juice
Adds acidity that brightens the sweet cherry flavour.

The step that matters

When almost frozen, add seeded cherries. If the mixture is fully frozen, the cherries cannot be stirred in evenly and the ice becomes hard and icy. Adding them while still partly slushy distributes the fruit throughout.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
