Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Whipped into a meringue, it adds lightness and a smoother, airier texture to the frozen sherbet.
Lemon juice
Adds acidity that brightens the peach flavor and balances the sweetness.
Sugar
Sweetens the base and lowers the freezing point, keeping the sherbet softer when frozen.
Pulped peaches
Provide the main fruit flavor, color and body of the sherbet.

The step that matters

Adding the meringue to the half-frozen mixture. If the base is too liquid or too fully frozen, the whipped egg white will not fold in evenly, leaving a streaky or dense texture instead of a light, smooth sherbet.

Swap the peach

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Orangefits better
