Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Provides the savoury fish flavour that defines the dish.
Potatoes
Form the starchy base that holds the mixture together and gives body.
Egg
Binds the mashed mixture so the balls keep their shape.
Cream or rich milk
Adds moisture and richness to keep the mash soft.
Butter
Adds richness and flavour to the mash and helps the frying surface brown.

The step that matters

Frying the balls until golden brown. The pan must be hot before the balls go in, so the outside browns and seals quickly instead of absorbing fat and turning greasy or falling apart.
