Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hops
Adds bitterness and aroma, and helps preserve the liquid.
Flour
Provides starch that feeds the yeast and thickens the starter.
Potatoes
Add starch and body that feed fermentation.
Brown sugar
Provides sugar that the yeast consumes to produce gas and flavor.

The step that matters

Let it cool to the consistency of new milk.. Liquid that is still hot can kill the yeast cells added later. Cooling it to a mild, milky warmth keeps them alive so fermentation can start.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, flour):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
