Why it works: Nutmeg and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Baked Custard

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Separate the egg whites and yolks.

  2. Beat the yolks with the sugar until smooth.

  3. Whip the egg whites to stiff peaks.

  4. Gradually stir the egg whites into the yolk mixture.

  5. Heat the milk until boiling, then cool it slightly.

Make the custard

  1. Mix the milk with the egg mixture and add the flavoring and salt.

  2. Grease a baking dish with butter.

  3. Pour the custard mixture into the dish.

  4. Grate nutmeg over the top.

Bake and serve

  1. Place the dish in a shallow pan of hot water.

  2. Bake at 400°F (200°C) for about 45 minutes.

  3. Check for doneness by inserting a teaspoon handle; it should come out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks and whipped whites set the custard and give it a rich, tender structure as they cook.
Milk
Provides the liquid base that the egg proteins set into a smooth, creamy custard.
Sugar
Sweetens the custard and helps keep the yolks smooth and tender while baking.

The step that matters

Baking in a water bath. Egg proteins set at moderate heat, and direct high heat can overcook the edges and cause curdling or a grainy texture. Setting the dish in hot water insulates the custard so it cooks gently and evenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, milk, butter, lemon):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Parsleyfits less well
  4. Tarragonfits less well

Fit is the average pairing score against egg, sugar, milk, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
