Peach Jelly

Ingredients

Directions

Prepare the fruit

  1. Pare the peaches and remove the stones.

  2. Slice the peaches and add the peach kernels.

  3. Place the peaches and kernels in a kettle with enough water to cover them.

Cook and strain

  1. Stir often until the fruit is well cooked, then strain the mixture.

Make the jelly

  1. For every pint of juice, add the juice of one lemon and measure again.

  2. Add 1 pound of sugar for each pint of juice.

  3. Heat the sugar until very hot.

  4. After the juice has boiled for 20 minutes, add the hot sugar and bring to a boil.

  5. Remove from heat immediately.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Supply the fruit flavor and the juice that will set into jelly.
Peach kernels
Add a subtle almond-like aroma to the juice.
Lemon juice
Adds acidity that helps the jelly set and brightens the flavor.
Sugar
Adds sweetness and helps the juice thicken into a firm jelly.

The step that matters

Remove from heat immediately. Once the sugar is added and the mixture reaches a boil, further cooking can darken the jelly and weaken its ability to set. Stopping heat at the right moment protects both colour and texture.

Swap the lemon

How well each one fits the dish's main ingredients (peach, sugar):

  1. Vanillafits better
  2. Apricotfits better
  3. Pearfits better

Fit is the average pairing score against peach, sugar. Candidates are from the same food group and used in at least 100 recipes.
