Strawberry Jam

Ingredients

Directions

Prepare the fruit

  1. Wash and hull the strawberries.

  2. In a preserving pan, combine strawberries and sugar.

  3. Stir gently to avoid breaking the fruit.

  4. Simmer for 30 minutes.

Pot and seal

  1. Pour into airtight pots.

  2. Cut round covers from writing paper, slightly larger than the pots.

  3. Smear the inside of the covers with egg white and tie them over the pots.

  4. Optionally, dip a circular paper in brandy and place it over the jam before sealing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Supply the fruit, flavour and most of the liquid that cooks down into the jam.
Sugar
Sweetens the jam and, by binding water, helps it thicken and keep well.

The step that matters

Simmer for 30 minutes. Simmering evaporates water and concentrates the sugar and fruit, so the jam thickens. Too little cooking leaves it runny and more likely to spoil in the pot.
