Why it works: Celery and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,810 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Mix the minced meat with salt, pepper, celery salt, grated onion, and beaten egg.

  2. Combine the bread crumbs with the strained tomatoes and let it stand for 5 minutes.

  3. Add the mixture to the meat mixture and mix thoroughly.

Mould and cook

  1. Fill small greased molds with the mixture and cover with greased paper.

  2. Steam for 30 minutes or oven-poach for 20 minutes at 350°F (175°C).

Serve

  1. Unmold, garnish with parsley, and serve with tomato sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Minced cooked meat
Forms the bulk of the timbale and gives it its savoury body.
Egg
Binds the meat mixture so the timbales hold their shape when unmolded.
Bread crumbs
Absorb liquid and soften the texture, keeping the timbales moist and tender.
Strained tomatoes or gravy
Adds moisture and flavour, and softens the crumbs as they stand.

The step that matters

Filling and covering the molds. Packing the mixture firmly without air pockets helps the timbales set cleanly and unmold whole. Greasing the molds and paper keeps the delicate egg-bound mixture from sticking.

Swap the onion
