Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Butter a baking dish or scallop shells.

Assemble

  1. Place one quarter of the breadcrumbs over the bottom of the dish.

  2. Add half the oysters and sprinkle with seasonings.

  3. Repeat with another layer of breadcrumbs, oysters, and seasonings.

  4. Then add the oyster juice.

  5. Cover with the remaining breadcrumbs.

Bake

  1. Bake for 30 to 40 minutes.

  2. If using shells, cut the oysters in halves.

  3. Bake for 15 minutes.

What each ingredient does

Oysters
Provide the main flavour and, as they cook, a tender, savoury filling.
Oyster juice
Adds moisture and concentrated oyster flavour that soaks into the breadcrumbs.
Breadcrumbs
Absorb the liquid and give the dish its body and structure between the layers.
Butter
Adds richness and helps the breadcrumbs brown in the oven.
