Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the strained tomato liquid into a firm jelly once chilled.
Tomatoes
Provide the main body, colour and tomato flavour of the jelly.
Sugar
Balances the acidity of the tomatoes and lemon juice.
Lemon juice
Adds acidity that brightens the tomato flavour.

The step that matters

Dissolving the gelatine. Gelatine must be fully dissolved in the hot tomato liquid, or it will not set evenly. Stirring it into the mixture while still warm, not boiling, helps it dissolve completely and set smoothly.

Flavor stand-ins for the onion

  2. Carrotbetter flavor fit
  3. Okrabetter flavor fit
  4. Onionthe original

Fit is the average pairing score against tomato, celery, clove, pepper, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
