Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam that traps air, giving the cake its light, airy structure.
Flour
Forms the cake's set structure once heated, holding the airy foam in place.
Fruit sugar
Sweetens the cake and stabilises the whipped egg white foam as it is added.
Cornstarch
Softens the crumb by diluting the flour's gluten, producing a tender texture.
Cream of tartar
Acidifies the egg whites, helping them whip to a stable, voluminous foam.

The step that matters

Folding in the flour mixture. Folding gently and sifting the flour in gradually keeps the whipped egg white foam from deflating. Overmixing knocks out the trapped air, which leaves the cake dense rather than light.
