What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Sweetens the syrup and balances the sharpness of the lemon.
Lemon juice
Adds acidity and bright lemon flavour to the jelly.
Lemon rind
Adds aromatic lemon oils to the syrup as it boils.

The step that matters

Stir the gelatine until fully dissolved. Undissolved gelatine grains stay as gritty specks and can leave weak set spots. Pouring the hot syrup over the softened gelatine and stirring until clear helps it disperse evenly before chilling.
