Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the gelatine

  1. Soak the gelatine in cold water for 5 minutes.

  2. Dissolve the soaked gelatine in boiling water.

  3. Stir in the sugar until dissolved.

Set the jelly

  1. Add the orange juice and lemon juice.

  2. Pour into a mold and refrigerate until set.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

  1. Orange + lemontop 1% of all pairs
    Smell alikestrong
    Cooked together10,634 recipes

    Shared aroma: 3-hexenal (apple, fruity).

  2. Sugar + lemontop 18% of all pairs
    Smell alikelow
    Cooked together53,532 recipes

    Shared aroma: 2-nonenal (fatty, green).

  3. Sugar + orangetop 20% of all pairs
    Smell alikelow
    Cooked together19,212 recipes

    Shared aroma: beta-damascenone (apple, rose).

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly gel as it cools.
Sugar
Adds sweetness and balances the sharpness of the citrus juices.
Orange juice
Adds the main orange flavour and some liquid to the jelly.
Lemon juice
Adds acidity that brightens the flavour and cuts the sweetness.

The step that matters

Dissolve the soaked gelatine fully in boiling water. Gelatine only sets evenly when it is completely dissolved. Undissolved granules or lumps leave specks and weak patches in the finished jelly.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (sugar, orange):

  1. Vanillabetter flavor fit
  2. Lemonthe original

Fit is the average pairing score against sugar, orange. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
