Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the lemon liquid into a light, wobbly structure as it chills.
Egg whites
Whipped into foam, they add airy volume and a light, fluffy texture.
Lemon juice
Adds acidity that brightens the sweetness and flavor of the pudding.
Sugar
Sweetens the jelly and balances the tartness of the lemon juice.

The step that matters

Beat the mixture when it begins to set, until foamy. If the gelatin has set too firmly, the mixture cannot whip smoothly and the foam will be lumpy. Beating while it is only partly set lets air be trapped and held. Stopping this step too late makes the mixture resist folding in the egg whites.

Swap the lemon

How well each one fits the dish's main ingredients (gelatin, sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against gelatin, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
