Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard as they cook, while whites are beaten to add lightness and airy body.
Sugar
Adds sweetness and balances the sharpness of the lemon.
Lemon juice
Adds acidity and bright flavour to the custard.
Lemon rind
Adds aromatic lemon oils, giving fragrance without extra liquid.

The step that matters

Cook over hot water until thick. Egg yolks set at moderate heat and can curdle or scramble if overheated. Gentle cooking over hot water keeps the custard smooth and thick, so it should be removed as soon as it reaches a soft custard consistency.

Swap the lemon
