What each ingredient does

Gelatine
Forms the gel network that sets the liquid into a firm, wobbly jelly when chilled.
Orange juice
Adds fruity flavour and aroma to the jelly.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.

The step that matters

Soak the gelatin before dissolving it. Gelatine must first absorb cold water so its granules swell and hydrate evenly; adding it dry or to hot liquid without soaking can leave lumps and uneven setting.
