Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a soft, wobbly structure as it cools.
Whipped cream
Adds lightness and a creamy texture through trapped air and fat.
Orange juice
Adds fruity flavour and a little acidity to the set cream.
Lemon juice
Adds sharpness that balances the sweetness and brightens the orange flavour.

The step that matters

Beating the partly set gelatine. If the gelatine is fully set, it cannot be beaten to a foam; if it is still liquid, it will not hold the whipped cream. Folding gently keeps the trapped air in the cream.

Swap the lemon

How well each one fits the dish's main ingredients (orange, cream):
