Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Cream the butter in a mixing bowl.

  2. Add flour, bread crumbs, cheese, salt, and cayenne; mix thoroughly.

  3. Stir in the milk until combined.

  4. Roll the dough to ¼ inch thick.

Cut and bake

  1. Cut into strips ½ inch wide and 5 inches long.

  2. Place on a baking sheet.

  3. Bake at 350°F (175°C) until lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat that makes the dough tender and rich in flavour.
Flour
Forms the structure of the dough once mixed with liquid.
Grated cheese
Adds savoury flavour and fat, and helps the straws brown in the oven.
Milk
Moistens the flour so the dough holds together and can be rolled.
Soft bread crumbs
Add body and tenderness to the dough while absorbing some moisture.

The step that matters

Bake until lightly browned. Cheese and flour brown quickly through the Maillard reaction, so the straws can turn from pale to over-browned and dry in a short time. Watch colour rather than only the clock.
