Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam to create the airy, rising structure of the cake.
Fruit sugar
Sweetens the cake and stabilizes the whipped egg white foam.
Flour
Provides the set structure that holds the cake's airy crumb together.
Cream of tartar
Acidifies the egg whites, helping them whip to a stable, voluminous foam.
Cornstarch
Tenderizes the crumb by diluting the flour's gluten, giving a finer, softer texture.

The step that matters

Folding in the flour mixture. Overmixing or deflating the whipped egg whites releases the air that makes the cake rise. Fold gently and sift the flour in gradually so the batter stays light.
