Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the lemon mixture as it cooks, giving the dessert its body and set.
Egg whites
Whipped into the mixture to create a light, airy, foamy texture.
Lemon juice
Adds the tart acidity that balances the sweetness of the sugar.
Sugar
Sweetens the dessert and dissolves into the syrup that forms its base.

The step that matters

Cooking the starch until thick and tasteless. Cornstarch must be cooked fully to thicken and to lose its raw starchy taste. Stirring while adding the starch mixture prevents lumps from forming in the syrup.
