Why it works: Peach and pineapple match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 168 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓

Fruit Jelly

Ingredients

Directions

Make the jelly

  1. Heat the fruit syrup in a saucepan until sweetened and flavored to taste.

  2. Dissolve the gelatin in the cold water and add it to the heated syrup.

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Fruit syrup
Provides the sweetness and flavor of the jelly.
Cold water
Dilutes the syrup and hydrates the gelatine so it can dissolve evenly.
Cooked fruit sections
Add texture and fruit flavor throughout the set jelly.

The step that matters

Dissolve the gelatin in the cold water and add it to the heated syrup. Gelatine must be fully dissolved before it goes into the syrup, or it forms gritty lumps and the jelly will set unevenly. Blooming it in cold water first lets it hydrate, then it dissolves fully in warm liquid.

Swap the pineapple

How well each one fits the dish's main ingredients (syrup, peach):

  1. Vanillafits better
  2. Apricotfits better
  3. Pearfits better
  4. Pineapplethe original

Fit is the average pairing score against syrup, peach. Candidates are from the same food group and used in at least 100 recipes.
