Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and 27,047 recipes mention both. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the liquid into a firm, sliceable jelly as it cools.
- Tomatoes
- Provide the main body, colour and flavour of the jelly.
- Lemon juice
- Adds acidity that brightens the tomato flavour.
- Sugar
- Adds sweetness that balances the acidity of the tomatoes and lemon.
The step that matters
Dissolving the gelatin. Gelatin must fully dissolve into the warm tomato liquid. Any grains left undissolved create weak, uneven spots, so the jelly may not set evenly or hold its shape when unmoulded.

Fit is the average pairing score against tomato, celery, clove, pepper, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
