What each ingredient does
- Cucumbers
- Provide the main crisp, firm pickled vegetable body.
- Vinegar
- Provides the acidity that preserves and sharpens the pickles.
- Brown sugar
- Adds sweetness that balances the sharp vinegar and mustard.
- Flour
- Thickens the vinegar mixture into a smooth, cooked sauce.
- Mustard seed
- Adds pungent, sharp flavour that defines the mustard character.
- Turmeric powder
- Gives the pickles their characteristic yellow colour and earthy aroma.
The step that matters
Cook the flour and vinegar mixture until thick. Flour must be added to the seasonings and vinegar gradually and cooked until thickened so the sauce is smooth. Starch needs heat to swell and thicken, and lumps form if the liquid is added too fast.
Swap the white pepper
How well each one fits the dish's main ingredients (cucumber, cauliflower, onion, pepper, vinegar, sugar, flour):
