The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a light, tender gel that holds its shape.
Saccharin
Provides sweetness without adding sugar.
Lemon juice
Adds acidity that brightens the flavour.
Orange juice
Supplies orange flavour and a little acidity.
Whipped cream
Adds fat and air, making the set gel lighter and creamier.

The step that matters

Beat and fold when partly set. Gelatine must be partly set before beating. If it is too liquid, it will not hold the foam, and if it is fully set, it will be too stiff to fold the cream in smoothly without lumps or deflating the air.

Swap the lemon

How well each one fits the dish's main ingredients (orange, cream):

  1. Vanillafits about as well
  2. Strawberryfits about as well
  3. Lemonthe original
  4. Raspberryfits about as well

Fit is the average pairing score against orange, cream. Candidates are from the same food group and used in at least 100 recipes.
