Raspberry Taffy

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the syrup

  1. Bring the sugar and water to a boil.

  2. Add the cream of tartar and cover for 10 minutes.

  3. Uncover and insert a thermometer; continue boiling until it reaches 300°F (150°C).

Flavor and set

  1. Add brilliant rose food coloring to achieve a bright red color.

  2. Stir in raspberry flavoring.

  3. Pour onto a frame or pouring plate and mark into bars or squares.

  4. Allow to cool; the taffy is ready for packing and sale.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White sugar
Forms the bulk of the taffy and sets firm as the syrup cools.
Cream of tartar
Acidity that helps prevent sugar crystals from forming, keeping the taffy smooth.
Water
Dissolves the sugar so it can be boiled into a syrup.

The step that matters

Boiling to 300°F (150°C). The syrup must reach the hard-crack stage so the candy sets firm once cooled. Stopping early leaves it soft and sticky, while overheating makes it brittle.

Swap the raspberry

How well each one fits the dish's main ingredients (sugar, cream, rose):

  1. Vanillafits better
  2. Raspberrythe original
  3. Strawberryfits about as well
  4. Orangefits less well

Fit is the average pairing score against sugar, cream, rose. Candidates are from the same food group and used in at least 100 recipes.
