Why it works: Walnut and lemon match in chemistry and in kitchens. They rank in the top 10% of all ingredient pairs, and cooks put them together in 2,149 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓

Walnut Taffy

Ingredients

Directions

The book gives no oven temperature. The 300°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Shell the walnuts and remove the skin, then chop them very fine.

  2. For enhanced flavor, roast the walnuts slightly before adding them.

Make the taffy

  1. In a large pot, combine glucose, brown sugar, and water. Boil until it reaches the weak crack stage (300°F).

  2. Lift the pot slightly from the heat and gently add the chopped walnuts.

  3. Allow the mixture to boil, then add a few drops of lemon flavoring.

  4. Mix thoroughly and pour out onto a surface to cool, marking into bars before it gets too cold.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Walnuts
Provide the main crunchy texture and nutty flavor throughout the taffy.
Glucose
Keeps the sugar syrup smooth and resists crystallising, giving a tender texture.
Brown sugar
Adds sweetness and molasses flavor, and helps set the taffy.

The step that matters

Boil to the weak crack stage (300°F). Boiling to the right temperature controls how much water is left in the syrup. Too little boiling leaves the taffy soft and sticky, while too much makes it hard and brittle once cooled.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Chickpeafits better
  2. Pistachiofits better
  3. Milletfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
