Almond Hardbake

Ingredients

Directions

The book gives no oven temperature. The 305°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Split the almonds with a sharp knife and lay them face down on an oiled plate, covering it closely.

Make the candy

  1. In a pot, boil the glucose, brown sugar, and water until it reaches the crack stage (305°F).

  2. Remove the pot from the heat and carefully pour the mixture evenly over the almonds.

  3. If desired, add a little lemon flavoring to enhance the taste.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the bulk of the sweetness and the caramel flavor of the candy.
Glucose
Inhibits sugar crystallization, keeping the candy smooth and preventing it from turning grainy.
Almonds
Supply the nutty crunch and texture that the hot sugar mixture sets around.

The step that matters

Cooking the sugar to the crack stage (305°F). Sugar syrup must reach the right temperature to set hard when cooled. Too low and the candy stays sticky; too high and it turns bitter or burns. A thermometer helps hit the target.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (sugar, almond):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, almond. Candidates are from the same food group and used in at least 100 recipes.
