Orange Sherbet

Ingredients

Directions

Prepare the syrup

  1. Remove the rind from the oranges and lemon.

  2. In a pot, combine the rind, water, and sugar, then boil for 5 minutes.

  3. Once the syrup cools, add the juice of the oranges and lemon, and set aside.

Make the base

  1. Heat 1 quart of milk until lukewarm, about the temperature of fresh milk.

  2. Add the liquid rennet or rennet tablet to the warm milk.

  3. Combine the warm milk with the remaining milk and cream, then sweeten to taste.

Freeze

  1. Freeze the mixture until it reaches a mushy consistency, then add the fruit syrup.

  2. Use plenty of coarse sea salt while freezing for best results.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sherbet and keeps it softer by lowering the freezing point.
Milk
Forms the creamy liquid base that the rennet acts on.
Cream
Adds fat for a richer, smoother texture.
Liquid rennet or rennet tablet
Curdles the warm milk so the base thickens and sets.
Oranges
Supply the main citrus flavor and acidity.

The step that matters

Freeze to a mushy consistency before adding the fruit syrup. Partly freezing the base keeps ice crystals small and the texture smooth. Adding the syrup at this stage, rather than after fully freezing, lets it blend in evenly instead of forming icy pockets.

Swap the orange

How well each one fits the dish's main ingredients (lemon, sugar, milk, cream):

  1. Vanillafits better
  2. Raspberryfits about as well
  3. Orangethe original
  4. Strawberryfits about as well

Fit is the average pairing score against lemon, sugar, milk, cream. Candidates are from the same food group and used in at least 100 recipes.
