Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the pickle itself, taking up the spiced vinegar as they sit in it.
Sugar
Adds sweetness that balances the sharp acidity of the vinegar.
Strong vinegar
Provides acidity that preserves the pickles and gives them their sharp tang.
Cinnamon
Adds warm aroma and flavor to the pickling liquid.

The step that matters

Keep the pickles fully submerged in vinegar. Cucumbers exposed to air can spoil and grow mold or bacteria. Keeping them covered by the acidic liquid, in a full jar sealed tightly, protects them during storage.

Swap the mace

How well each one fits the dish's main ingredients (cucumber, sugar, cinnamon, ginger, allspice, celery, clove):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against cucumber, sugar, cinnamon, ginger, allspice, celery, clove. Candidates are from the same food group and used in at least 100 recipes.
