Pan Fish
Ingredients
Directions
Place large fish in a thick-bottom frying pan with heads facing the same direction.
Fill the spaces with smaller fish.
Fry until the large fish are browned and ready to turn.
Cover with a dinner plate, drain off the fat, then invert the pan to leave the fish on the plate.
Return the fish to the pan, and when hot, slip back the fish.
Fry the other side until browned, drain, and turn onto a plate as before.
Transfer to a warm platter for serving.
Garnish with lemon slices.
