Why it works: Nutmeg and mace are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 6,557 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Stewed Water Turtles, or Terrapins
Ingredients
Directions
Prepare the terrapins
Select the largest, thickest, and fattest female terrapins, ensuring they are alive.
Wash the terrapins and place them in boiling water with a little salt.
Boil for 10 to 15 minutes until thoroughly cooked.
Remove the shell, extract the meat, and discard the sand-bag, gall, and entrails.
Stew and make the sauce
Cut the meat into pieces and place it in a stew pan with its eggs and sufficient fresh butter.
Cover and stew until hot, shaking the pan occasionally.
In another pan, make a sauce with the beaten yolk of an egg, Madeira or sherry, nutmeg, mace, currant jelly, cayenne pepper, and salt.
Stir over heat until almost boiling, then remove from heat.
Serve
Serve the terrapins hot in a covered dish with the sauce separately in a sauce-tureen.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Female terrapins
- Provide the main meat, and their eggs and fat enrich the stew.
- Fresh butter
- Adds fat and richness, helping the meat stay moist while it stews.
- Beaten egg yolk
- Thickens the sauce gently as it heats and gives it a smooth, rich body.
- Madeira or sherry
- Adds acidity and wine flavour that balances the sweetness of the jelly.
- Currant jelly
- Adds sweetness and body to the sauce.
The step that matters
Stir the sauce over heat until almost boiling. Egg yolk thickens when heated gently but scrambles if it gets too hot. Stopping just short of boiling keeps the sauce smooth.
Swap the currant
How well each one fits the dish's main ingredients (butter, egg, sherry, nutmeg, mace, pepper):
