Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Grease a tin plate half the size of a dinner plate with butter.

  3. Cover the bottom with puff pastry.

Assemble

  1. Place 5 to 6 oysters on the pastry, butter them, and season with salt and pepper.

  2. Beat the egg and spread it over the oysters.

  3. Cover with another layer of puff pastry, making small openings with a fork.

Bake

  1. Bake for 15 to 20 minutes, or until the top is nicely browned.

What each ingredient does

Puff pastry
Forms the flaky base and top that enclose the filling and puff when baked.
Oysters
Provide the main filling, releasing moisture and a briny flavour as they cook.
Egg
Sets when baked and helps the top brown and bind the oysters to the pastry.
Butter
Adds richness and helps the oysters brown and the pastry crisp.

The step that matters

Covering with the top pastry and venting it. Oysters release liquid as they heat, so the small fork openings let steam escape. Without them, trapped steam can make the pastry soggy and lift it unevenly.
